Mr. Folkie and I were warned several times before our trip that food in China would be different from Chinese food in the U.S. This was true, but I think we were better-prepared than a lot of Americans in that we like trying unusual foods, and we eat and drink soy products as a regular part of our diet.

Now I’m hungry! What the hell exploded? Is that a fish?

Hot pot! I missed it in China.

The beer is called Yanjing Beer, it is the local brand of Beijing. In China, beers are localized. It is hard to buy beers from other regions or cities out side your area. Local protection of their business?
The food from Sichuan look delicious to me. I wish I will go there some time.
The basic food you had in Beijing is kind of fast food in China. they are easy to make, lots of sugar, salts and oils and they do not taste good most of the time.
I glad you had hot pot there. I missed it.

Nat! Yes, that is an exploded fish. When it is deep-fried in very hot oil, the meat just pops up out of the hash marks cut into the raw fish.
And the pile of curly stuff on the other plate behind the fish, I forgot to mention, was at least three times as high as in the photo when it was served to us and was purportedly from a single potato.

Kun —
I think I would have liked the hot pot better if the weather in Beijing had not been so hot. Hot pot seems like a nice fall or winter meal. And the spicy side was so hot, I couldn’t eat anything cooked in it.
The basic dish was pretty good, I thought, and not nearly as salty or greasy as what you would find in an American place. The Sichuan food was great. If you ever go to Chengdu, I can tell you where that restaurant is.
